Am I Fat Weight Loss Recipes
Low in Fat Breakfasts-
LOW FAT APPLE MUFFINS


  • 1 cup whole wheat flour
  • 1/2 cup apple
  • 1/2 cup skim milk
  • 1 large egg
  • 3 tbsp unsweetened applesauce
  • 1 tsp double acting baking powder
  • 1/4 cup brown sugar
  • 1/4 tsp salt
  • 1 tsp ground cinnamon

Set oven to 400°F. Prepare muffin pan. Spray 7 muffin cups with nonstick vegetable spray. In a small bowl, add whole wheat flour, salt, baking powder, and cinnamon. In a second bowl, lightly beat egg. Add milk, sugar, and applesauce to egg mix. Peel and chop apples to about 1/4" x 1/4" x 1/4". Using light strokes, stir flour mixture and wet ingredients until blended. Batter should still be slightly lumpy. Fill muffin cups to about 2/3 full. Set timer for 25 minutes and place in oven.

BLUEBERRY BANANA PANCAKES


  • 3/4 cup flour
  • 1/4 cup dried blueberries
  • 1/4 cup baby banana food puree
  • 1 large egg
  • 1/2 cup skim milk
  • 1/3 tsp salt
  • 1/4 tsp baking soda
  • 2 tbsp white sugar
  • 1/2 tsp double-acting baking powder
  • 1/8 tsp banana extract

Sift all-purpose flour into medium sized bowl. Resift again, with salt, sugar, baking soda, and baking powder. Combine milk, baby food, extract, and egg white into a separate medium sized bowl and mix with a fork. Mix dry ingredients to the wet ingredients and stir together with a fork. Use about fifteen strokes or until the lumps are just beaten out. Be careful not to overbeat. Add blueberries to mixture, and stir. Heat skillet on medium flame for one minute, and spray griddle with vegetable spray. Pour 1/4 cup of pancake batter onto skillet and let it cook on a medium/low flame for two minutes. Flip pancake over and brown the other side for two minutes. Remove from skillet. Wipe skillet with a dry paper towel. Spray griddle with vegetable spray. Repeat steps 6,7, and 8. Serve pancakes with maple syrup, or plain. Top with strawberries.

EASY LOW FAT FRENCH TOAST


  • 2 slices wholewheat light bread
  • 1/4 c egg substitute
  • 1/2 T fat free milk
  • Cinnamon (to taste)
  • Nutmeg (to taste)
  • 2 T Sugar free syrup

Mix egg substitute, milk, cinnamon and nutmeg until blended. Heat up a nonstick pan on meduim hight to high heat (or use a pancake setting on your electric griddle). Soak both sides of bread in batter until both sides are coated and place in pan. Let cook for about 30 - 45 secs on each side (or until done). Put them on a plate and drizzle each piece with 1 T of syrup and enjoy

OATMEAL-APPLE WAFFLES


  • 1 large apple, halved and unpeeled
  • 2 large eggs, separated
  • 1 cup apple juice
  • 1/2 cup low fat milk
  • 1 tsp. lemon extract
  • Grated zest of 1 lemon
  • 3 tbsp. vegetable oil
  • 1 1/2 cups flour
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1/3 cup rolled oats
  • 1/3 cup oat bran
  • 2 tbs. ground cinnamon, or to taste
  • 2 to 2 1/2 cups applesauce for garnish

1. Heat waffle iron. Core and dice half apple, keeping skin intact. Set aside diced apple.
2. Beat egg yolks in large mixing bowl until frothy. Add apple juice, milk, lemon extract, lemon zest and vegetable oil and beat until smooth. Sift flour with salt and baking powder, and fold into egg mixture. Stir in oats, oat bran, sugar, cinnamon and diced apple. Beat egg whites until stiff, and fold into batter.
3. Spray hot waffle iron with nonstick cooking spray. Ladle batter into iron, and cook according to manufacturere's direction and to desired doneness. (or till golden brown coloured) Remove from iron, place cooked waffle on serving plate and repeat until all batter is used up.
4. To serve, garnish each waffle with 1/2 cup apple sauce in center. Slice remaining half apple into slices and serve with waffles. You can also sprinkle waffles with powdered sugar and cinnamon.
